Mochiko Chicken

Ingredients
- 5 pounds boneless skinless chicken breasts, cut into strips
- 1 cup white rice flour
- 1/3 cup corn flour
- 1 cup soy sauce
- 1 1/2 tablespoons salt
- 1/2 cup white sugar
- 1 cup chopped spring onions
- 6 cloves finely chopped garlic
- 1 teaspoon cayenne pepper
- 5 eggs
Instructions
- In a large bowl combine the flour, corn flour, soy sauce, salt, sugar, spring onions, garlic, cayenne pepper and eggs. Mix well. Add the chicken and marinate for 24 hours, refrigerated.
- Remove from refrigerator, deep fry and serve.
