Creamy Pasta Primavera

Ingredients

  • 4 ounces spaghetti
  • 1/3 cup butter, divided
  • 1/2 cup chopped spring onions
  • 1/4 cup sliced green pepper
  • 1/4 cup sliced red peppers
  • 1 (4 ounce) can mushrooms, drained
  • 3/4 cup milk
  • 1 (8 ounce) package cream cheese
  • 2 cups diced cooked ham
  • 1/3 cup grated Parmesan cheese

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. In a skillet, melt 1/4 cup of the butter. Sauté spring onions, green peppers, red peppers and mushrooms. Add cream cheese and milk and stir over low heat until cream cheese is melted. Stir in ham and parmesan cheese. Toss spaghetti with remaining butter. Combine with cream cheese mixture; toss lightly.
