Smoked Salmon Pesto Pasta

Ingredients

  • 5 ounces smoked salmon
  • 1 onion, chopped
  • 1 clove crushed garlic
  • 2 cups fresh sliced mushrooms
  • 3/4 cup pesto
  • 3 tablespoons tomato puree
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh basil
  • 1/4 cup water
  • 8 ounces spaghetti

Instructions

  1. Cook pasta in a large pot of boiling water until al dente.
  2. In medium skillet, cook olive oil, onion, mushrooms, and garlic until onion is transparent and mushrooms are well cooked. Stir in tomato puree, pesto sauce, chopped basil, water, and smoked salmon; cook gently for 5 - 10 minutes, or until desired consistency is achieved.
  3. Drain pasta. Serve sauce over noodles.
