Ingredients

  • 3/4 cup wheat and barley cereal
  • 1 1/4 cups buttermilk
  • 1 egg
  • 3/4 cup white sugar
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 2 cups plain flour
  • 2 tablespoons melted shortening

Instructions

  1. In a small bowl, soak grape nuts in buttermilk for 1 hour.
  2. In a large bowl, combine buttermilk mixture, sugar, salt, egg, and bicarbonate of soda. Stir until sugar dissolves. Mix in the melted shortening and the flour. Pour batter into a greased and floured 9 x 5 inch loaf pan.
  3. Bake at 175°C for about 45 minutes. Allow to cool.
