Oatmeal Blueberry Pancakes

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup plain flour
  • 2 teaspoons white sugar
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons bicarbonate of soda
  • 1 teaspoon baking powder
  • 2 eggs
  • 2 cups buttermilk
  • 1 cup frozen blueberries

Instructions

  1. Heat a lightly oiled griddle or frying pan over medium high heat.
  2. In a large mixing bowl, mix together oats, flour, sugar, salt, bicarbonate of soda and baking powder. Stir in eggs and buttermilk. Fold in blueberries.
  3. Pour or spoon the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
