Amaranth

Amaranth greens (also known as pigweed in England) are a common leaf vegetable throughout the tropics and in many warm temperate regions. They grow wild in the UK, and have a taste similar to spinach, but sweeter and more tender. Their thick, celery-like stalks taste somewhat like artichokes.
