Mustard Greens
The dark green or red leaves of the mustard plant provide a hot, peppery flavour when eaten raw or added to cooked dishes. They may be sautéed, steamed, braised or used as a zesty addition to green salads. Their bitter pungency may be decreased by blanching them briefly in salted water.
