Lamb's Lettuce

Also known as corn salad, field lettuce or mâche, lamb's lettuce is actually a salad green rather than a true lettuce. It has small, spoon-shaped, dark green leaves that have a velvety texture and a rich, sweet flavour somewhat similar to hazelnut.

It has a more substantial texture and flavour than lettuce, and works particularly well in winter salads, especially when combined with beetroot or potato. A mustard dressing will bring out its flavour. In addition to salads, this green can also be steamed and served as a vegetable.
