Kale

Kale is a dark green leafy vegetable with a distinctive cabbagey taste. It is usually served as an accompanying vegetable, especially for strongly-flavoured or spiced dishes, such as curries.

Unless they are very thin, the tough stalks are usually discarded, so that only the leaves are cooked and eaten. Kale is an excellent source of iron, calcium, folic acid, vitamin C, vitamin K and carotenoids (which provide vitamin A).
