Frisée
Also known as curly endive, these feathery, curly, bitter salad leaves are a member of the chicory family. Whilst the frizzy green outer leaves are strongly bitter, the paler inner leaves are usually slightly more tender and mild. The leaves may be added raw to salads with a selection of other salad greens and a well-flavoured dressing to counteract any bitterness.

It is important to note that what we call curly endive in Britain is often known as chicory in North America, whilst what is known as endive in the US is called chicory here in the UK.
