Parsnips
The parsnip is a winter root vegetable related to the carrot. Slightly larger and more triangular-shaped than carrots, they are a creamy white, with a sweet, earthy flavour that may be enhanced by the addition of ginger, spices and honey.

Available from early autumn until spring, parsnips are at their best in mid-winter, especially when they have been touched by frost. They may be added to stews, casseroles and soups or may be grated raw and added to salads. However, parsnips are probably at their best when served as an accompanying vegetable, either roasted, baked or boiled.
