Beetroots

The beetroot (or beet) is a globe-shaped or pointed root vegetable with deep red flesh, a rich, smooth texture and a distinctive, sweet, earthy flavour. There are golden and white beetroot varieties available that have the same flavour as red beetroot, but without the glorious colour.

Baby beetroot are small, immature vegetables that may be cooked and served whole. The greenery attached to young beetroots may also be cooked, providing an accompanying vegetable that taste somewhat like spinach.

Beetroots may be bought raw, cooked and peeled, or pickled in vinegar. Raw beetroot may be added to salads, made into borscht (a hot or cold vegetable soup), baked, boiled or sautéed. Once cooked, it makes a colourful vegetable side dish, which may be enhanced by seasoning with parsley, horseradish or mint. Pickled beetroot is particularly good with cold meats.
