Runner Beans

Runner beans, sometimes also known as 'green beans', have long, rough and usually stringy pods, although stringless varieties are also available. They are best eaten when very fresh; they should break with a clean snap when bent in half. Although runner beans are usually green, there are also purple-podded beans; however, these turn green when they are cooked.

Once cooked and de-stringed, runner beans may be used in salads or served as an accompanying vegetable sprinkled with fresh dill, sage or basil.
