Straw Mushroom

Otherwise known as the paddy straw mushroom (Volvariella volvaceae), this tiny Chinese mushroom is so called as it is grown on straw from paddy fields. They are used extensively in East Asian cooking, and although they may be occasionally found fresh in Chinese supermarkets, straw mushrooms are more normally found canned outside their native land.
