Hedgehog Mushrooms

The hedgehog mushroom (Hydnum repandum) is easily recognised by its pale orange-cream colours and the clustered spines underneath its cap. It is found in deciduous woods from late summer to autumn, and has a sweetly nutty flavour, and, if the spiny gills are left on, a crunchy texture.

It may be fried in butter or used in risottos, pasta sauces, soups and stews.
