Cauliflower Fungus
Also known as Brain Fungus or Broody Hen, the cauliflower fungus (Sparassis crispa) is a large, cream coloured mushroom that looks something like a cross between a sea-sponge and a cauliflower. It is a native to the UK, where it prefers to grow on old conifer and Scots pine tree roots or stumps, reaching up to 60 cm (2 feet) across.

Cauliflower fungus has brittle, wax-like flesh, a pleasant smell and a delicate light, almost nutty, flavour. Once cleaned, it may be sliced and fried in butter with parsley and garlic, or dusted with flour and sautéed in butter with finely chopped shallots or onions.
