Squash
Squash are a group of fruiting vegetables of the genus Cucurbita. They include the soft-skinned young and tender summer squash, such as courgette, and the brightly coloured winter squash, with their inedible skins and firm flesh; for example, the pumpkin.
Summer squash have a tender flesh that requires only a short amount of cooking, and must generally eaten within a short period of time as they are very perishable. In comparison, winter squash may be stored in a cool, dark place for long periods of time, but need a far greater amount of cooking.
