Palm Hearts

These tender buds or shoots of the cabbage palm tree are also known as 'hearts of palm'. They are pale ivory in colour, with a mild flavour somewhat similar to that of an artichoke. When cooked, they may be eaten with any of the sauces suitable for asparagus, such as melted butter, hollandaise or mayonnaise; they are excellent with a vinaigrette dressing when blanched and served cold.
