Bamboo Shoots

There are a number of different varieties of bamboos that, once stripped of their tough brown outer skins, may be eaten. Bamboo shoots are most commonly available in the UK sliced and canned in brine or water. They have a crunchy, almost fibrous, texture like celery, with a taste similar to that of a globe artichoke.

Canned bamboo shoots should be rinsed well in fresh water before adding to stir-fries and Oriental dishes. As they only need to heat through rather than cook, they can be added right at the end of the cooking time.
