Turnips

The turnip has a distinctive, nutty taste and a green or purple tinged creamy-white skin. When they are relatively small their flesh is tender with a delicate flavour; they become coarser when they are allowed to become bigger than a tennis ball.

Baby turnips have a sweet, mild radishy flavour, which is quite different to maincrop turnips (in the same way that new potatoes are different from old). They are best cooked by boiling or steaming for a few minutes before glazing with butter. Maincrop turnips may be served mashed, puréed or boiled as an accompanying vegetable. They may also be added to soups, stews and stir fries.
