Split Peas

Split peas are a variety of a yellow or green garden pea that have been dried and split in half along their natural seam. When split, these dried peas do not need to be pre-soaked before cooking. Both the yellow and the green varieties are used in purées, soups and recipes that require a thicker food base.

Yellow Split Peas

This small pea has a mild, earthy flavour. It forms the basis of a thick yellow pea soup traditionally served in Sweden, whilst in Britain its is used to make pease pudding - a savoury dish of boiled peas served with ham or salt pork. They may also be included in stews and are a popular addition to Indian vegetarian dishes.

Green Split Peas

Green split peas are most commonly used to make soups. When cooked, they turn into a purée by themselves and so do not need to be mashed.
