Rock Cornish Game Hen

This is a variety of small-sized chicken that is a cross between the White Rock and the Cornish breeds. Usually weighing around 675 g (1.5 lb), they are best marinated, then roasted or spatchcocked and grilled, in much the same way as a poussin or poulet.
