Poulet & Poussin

Poulet (spring chicken) and poussin (baby chicken) are small immature birds that can be split (spatchcocked) and grilled over charcoal or under fierce heat. Marinade in olive oil, lemon and herbs before grilling, allowing one poulet for two people, or one poussin per head.
