Tortelli
Also known as anolini, tortelli is made by placing a filling on a circle of pasta 5 cm in diameter, then folding it in half to form a semi-circle. The stuffed pasta may then be wrapped around a finger and the corners pinched together to form a shape similar to tortellini. However, the shape and size and shape of tortelli can vary in different regions, and they may be found shaped as a circle, half circle, square, rectangle, or triangle.
