Ravioli, Ravioloni & Ravioletti
Ravioli are small (about 5 cm), square pillows of stuffed pasta made by sealing a filling between two pasta sheets. Traditionally the filling comprises of spinach (or some other cooking green) mixed with ricotta cheese, but many other ingredients may be used, such as meat, mushroom, pumpkin or goat's cheese.

Ravioli
Ravioletti is a smaller version of ravioli, whilst ravioloni is larger. Larger still is raviolo; measuring about 15 cm across, just one of these stuffed pasta is suitable for a single serving.
