Cappelletti & Cappelloni

Cappelletti (alpine hats) are 5 cm squares of pasta that are stuffed and folded diagonally to form a triangle. These are then twisted to form the shape of a hat. They are usually served with a light sauce, or in a broth or pasta salad.

Cappelloni is simply a larger version of cappelletti.

Cooking Times

  • Cappelloni: 13-15 minutes
  • Cappelletti: 3-7 minutes
