Lasagne, Lasagnette & Lasagnotte
Lasagne is a wide, thick noodle that is most commonly used to make the Italian casserole dish of lasagne al forno, made with alternating layers of pasta, rich creamy béchamel sauce and ragù (meat sauce).
Traditionally, the flat or frilly-edged sheets are 25-33 cm long and 5-9 cm wide. However, they are now available in smaller sizes, usually about 15 cm by 10 cm, which are easier to fit into a baking dish.
Lasagne sheets usually need to be boiled before using in baked pasta dishes, although pre-cooked lasagne may be used to save time. It is worth noting that although these oven-ready sheets are convenient, they do tend to absorb moisture from the sauce, making the final dish slightly more dry.

Spinach Lasagne
Lasagnette is a narrower version of the long lasagne noodle. Whilst it can be used in a baked pasta dish, it may also be served with a light sauce.

Lasagnotte is a ribbon pasta that is the same width as lasagnette, but longer in length. It can used in baked dishes or tossed in a sauce.
