Tofu Noodles

These narrow, flat noodles are made from compressed tofu, which provides them with high amounts of protein and other nutrients. They look somewhat like a pack of rubber bands and have a rather similar chewy texture. Sold in fresh, frozen or dry forms, tofu noodles may be used in stir-fries, salads and soups.

Cooking Information

Dried noodles should be soaked in water and bicarbonate of soda for about 15 minutes until they are soft, and then rinsed in cold water. They may then be added to the dish in which they are to be cooked.

If fresh, simply rinse the noodles and pat them dry before adding to the soup, salad or stir-fry.
