Soba
These long, straight, thin grey-brown Japanese noodles are made from buckwheat and wholewheat flours and used in soups and stir-fries. They are most often available as dried long, straight, spaghetti-like rods, but they can also be found fresh in Japanese markets.

Soba is also sold in a variety of different colours, such as green cha soba (flavoured with green tea) and yamaimo soba, flavoured with yams.
Cooking Information
Fresh noodles should be cooked in boiling water for 2-4 minutes, whilst dried noodles should be cooked for 5-7 minutes.
