Cantonese Noodles

Also known as lo mein noodles, these long Chinese egg noodles are usually precooked and dried before packaged. They are most commonly used to make lo mein, in which the noodles are stir-fried along with the other ingredients, although they may also be added to soups. They come in two shapes: use round noodles for soups and flat ones for stir-fries.
