Liquorice

Liquorice (or licorice) root (Glycrriza glabra) has a highly aromatic and slightly medicinal aroma and a sweet tasting flavour with a slightly bitter, slightly salty aftertaste. It is available as dried, woody pieces of root, as a powder and as solid sticks of concentrated essence which are glossy black, sweet and partly soluble in water.


Liquorice Powder

Liquorice root is a natural sweetener and is most commonly used to flavour confectionary such as Liquorice Allsorts or Pontefract cakes. However, much as the liquorice flavour of these sweets actually comes from anise; no more than 2% natural liquorice extract is usually used.


Liquorice Root

Liquorice is often used in Chinese cuisine to enhance the flavour of savoury foods such as broths and dishes simmered in soy sauce. It may also be made into a strong-flavoured herbal tea.
