Celery Seeds

The seeds of celery (Apium graveolens) may be used as a spice, and although they can have a bitter flavour, they can give soups and stews a lift, and are very useful when fresh celery isn't available. Celery seeds also work well with rice and tomato dishes, as well as savoury bread and into pickling mixtures. When ground, they may be added to salt to produce celery salt, which can be used to enhance the flavour of cocktails such as Bloody Mary and Bloody Caesar, as well as savoury dishes and snacks such as popcorn, salads, eggs, chips and crisps.
