Sherry Vinegar

Sherry vinegar is a rich, mellow-flavoured vinegar made using sweet sherry. Its tangy, nutty flavour may be used in place of balsamic vinegar to give a slightly drier result. It can be added into sauces or stews, and may also be used in salad dressings and in marinades for grilled meat. Mixed half and half with lemon juice, sherry vinegar (also known as xeres vinegar) produces a nutty vinaigrette that tastes somewhat similar to walnut oil.
