Cayenne Pepper

Cayenne pepper is a red-orange, fiery-hot powder made from ground dried chilli pods and seeds. This delicious, pungent seasoning originally came from Cayenne in French Guiana and is used in dishes such as devilled almonds and devilled turkey. It is also excellent when added to the gravy served with roast wildfowl (particularly mallard), and may also be used to flavour savoury dishes of eggs, cheese and seafood.
