Piccalilli

Piccalilli is a strong mustard pickle that consists of a mixture of chopped vegetables such as cauliflower, onions, cabbage, carrots, green tomatoes, peppers, gherkins and courgettes. The vegetables are blanched and covered with a mixture of mustard, vinegar, chillies, ginger, salt, sugar and plenty of turmeric to colour it to its distinctive bright yellow.

Piccalilli (often misspelt as 'picalilli') is most commonly served as an accompaniment to cold meats or pork pie, or as part of a Ploughman's lunch, where it cuts through the fattiness of the cheese and meat. It may also be used as a topping for grilled and roasted meats, such as hamburgers or hot dogs, and may even be used as a sandwich spread or dipping sauce.
