German Mustard
German mustard (also known as serif) is made from a blend of vinegar and strong mustard flour. It is a pungent and aromatic condiment, with its flavour resting halfway between the earthy, aromatic taste of Bordeaux mustard and the hot, sharp tang of English mustard. There are also hot (scharf) and extra hot (extra scharf) varieties available.
In Bavaria and the south of Germany, they make a paler, milder mustard, whose sweet flavour and coarse grains complement the local weisswurst (veal sausage) perfectly.
