French Mustards
Although there are thousands of different varieties of French mustards, the most famous of these are the mustards of Dijon, Bordeaux and Meaux. Other varieties may be made with tarragon or other fresh herbs, which produce a pleasant-tasting green coloured mustard, or they may contain tomato purée to make a red-brown mustard. There is also a variety called moutarde au poivre vert, which is a mild mustard with a bite of crushed green peppercorns.
