American Mustard
Although the US produces a wide variety of mustards, what most people think of as true American mustard is the thick, yellow ketchup-like condiment traditionally eaten with hot dogs and hamburgers, known there as ballpark mustard.
This mild, sweet mustard is made from white mustard seeds flavoured with sugar, vinegar or white wine, and is given its distinctive yellow colour by the addition of turmeric. As well as being the ideal companion for hot-dogs, American mustard may be also be added to mayonnaise to give it a slightly piquant flavour. This sweet mustard mayonnaise is perfect for salads that contain hard-boiled eggs, such as tuna fish salad and potato salad.

Also popular in the States is also a brown German-style mustard, which has a spicy sweet-sour flavour that complements ham (especially in sandwiches) perfectly.
