Relish
Relish is the term often used for pickles made from fruit or vegetables that have been chopped into small pieces. They are flavoured with vinegar, sugar, salt and spices to produce a sweet-tasting savoury sauce that may be served to complement a range of foods. Relish varieties include pickle relish (containing diced gherkins), corn relish, onion relish and cranberry relish, providing flavours from mild to spicy and from sweet to tart.

They are typically served with hot dogs, hamburgers, chicken or fish, as an ingredient in sauces or as a salsa or dip for crisps and nacho chips. Their texture also makes them ideal for adding into sandwiches.
