Plum Sauce
Plum sauce is a thick, sweet-sour sauce made from plums preserved with chilli, ginger, vinegar, sugar and spices. This tangy, fruit sauce is a popular ingredient in Chinese cookery, and works particularly well with duck, pork and spareribs as well as stir-fries containing chicken, salmon or prawns. It may also be used as a dipping sauce for prawn crackers, Peking duck and spring rolls.

Plum sauce may be stored in a cool, dry place for up to a year, although once opened, it should be kept in the fridge and used within a week.
