Anchovy Essence & Paste
Anchovy essence is a viscous, pink-coloured sauce that may be used to flavour any kind of savoury dish, particularly fish pies and sauces. It has a concentrated salty flavour that should be used sparingly; a few drops will usually suffice. When mixed with soy sauce, it can be used as a substitute for fish sauce for Thai recipes.
Anchovy paste is commonly sold in pots or tubes, and is delicious when spread very thinly on hot buttered toast. It may also be used to flavour sauces for fish.
