Fines Herbes

Fines herbes is a traditional French mixture of the more tender herbs - parsley, chervil, chives and sometimes tarragon - all chopped finely. Since this combination of herbs does not retain its flavour well, it is best to added to food immediately before serving.

Fines herbes may be added to mayonnaise and used as a sauce to accompany cold poached salmon, prawns or hard-boiled eggs, or they may be mixed into melted butter with a squeeze of lemon, and poured over either veal escalopes or roasted, grilled or fried chicken. They may also be used to flavour a range of dishes, such as omelettes and poached sole.
