Burnet
Burnet (Poterium sanguisorba), also known as salad burnet, is a herb that has long-stemmed round leaves with serrated edges. These grey-green leaves are picked before the plant flowers when they are young and tender. Their refreshing cucumber flavour works well in salads, herb mixes and sauces, and they may also be used as a flavouring for vinegar. Burnet should always be used fresh, as it soon loses its flavour when dried.
