Borage
Borage (Borago officinalis), also known as starflower, is a hairy, bristly plant with pretty, intensely blue flowers. The stem and the flowers are used as the traditional garnish for Pimms (a fruity, gin-based summer drink), and the flowers, which have a soft, honey flavour, are also used to decorate salads and desserts. If frozen into ice-cubes, the flowers can be made into exotic drink coolers.

Borage leaves have a mild, cucumber-like flavour and may be used in salads and sauces. However, as they are covered with prickly, throat-catching hairs, they should be blanched or chopped finely before adding to any dish.
