Palm Syrup
Palm syrup is a natural syrup made from sap of the date palm tree. To prevent damage to the tree, sap is only removed at certain times of the year from palm trees that have matured to over 30 years of age. The sap (known as 'sweet toddy') is boiled down to produce a dark, coarse unrefined sugar known as jaggery and the sweet dark, sticky palm syrup.

Used extensively in South-east Asian and Indian cuisine, palm syrup may be added to puddings, desserts, breads and other recipes.
