Muscovado Sugar
Muscovado is an unrefined sugar with a soft, fine-grained texture. It is produced during the third crystallisation of the cane syrup, and contains natural molasses that provides a rich flavour and aroma. It is sold as either a dark or light brown sugar.
Light brown muscovado sugar has a relatively low molasses content of 6%. Its subtle flavour is ideal for crunchy toppings, light cakes and puddings, and it may also be used in pickles, chutneys and for adding into coffee.
Dark brown muscovado sugar contains about 13% molasses, making it richer and stickier than the light brown variety. It is often confused with Barbados or molasses sugar; however, molasses sugar has a finer texture than the muscovado. It may be used in the same way, in dark fruit cakes and puddings, gingerbread and home-made toffee.
Muscovado sugar may be kept in a cool, dry place for up to a year. Once opened, it should be stored in an airtight contain to prevent it from becoming damp or hard.
