Wholewheat Grain

Also known as wholewheat berries, wholewheat grain is the entire wheat kernel (without the husk), which contains the bran, wheatgerm and endosperm. Sold whole, this brown or red-coloured seed may be cooked and eaten in the same way as rice with meat, fish or vegetables, or mixed into salads, soups and stews. The grain may also be slow-cooked overnight to produce a type of porridge known as frumenty. Wholewheat berries must be soaked overnight before cooking.

The grain may also be crushed (or 'cracked') into smaller pieces to produce cracked (or kibbled) wheat.
