Type 00

Also known as dopio zero, semolina flour or Italian flour, Type 00 flour is made from coarsely ground durum wheat. It is traditionally mixed with water (and sometimes eggs) to make pasta.

Durum wheat is high in protein and gluten, making it ideal for making pasta dough; it may be rolled out thinly without breaking, holds its shape well and does not fall apart or disintegrate during cooking. The resulting pasta has a rough surface, which means that sauces are more readily absorbed.

Type 00 is also used to make gnocchi (an Italian dumpling), and a variety of breads and other baked goods
