Medium-Grained Rice

Medium-grain rice is shorter and stickier than long-grain rice, with a length that is 2 to 3 times its width. The grains remain moist and tender when cooked; however, they do tend to clump together. This type of rice is available in different varieties, such as aromatic, white and brown, and is typically used for stir-fry recipes, desserts, casseroles, risottos and paellas.
