Passion Fruits

The passion flower vine produces an egg-shaped fruit, with a purple-brown hard skin that becomes wrinkly as it ripens. Its richly perfumed, sweet- tart flesh is a golden colour, with a jelly-like texture and hundreds of small, edible yellow-green seeds.

In addition to the lemon-sized dark purple passion fruit, there is a bright yellow variety that can grow up to the size of a grapefruit, with a smooth, glossy rind, known as 'granadilla'. However, despite the difference in exterior appearance, the interior flesh and seeds taste just the same as the purple variety.

The skin of the passionfruit cannot be eaten, and so the flesh and seeds are usually scooped out and mixed in fruit salads or added to ice cream, mousses, sorbets, jams and sauces. Alternatively, the seeds may be sieved to produce a sweet nectar.
